I had a long to-do list today, so I decided to do a crock pot dinner. I have been craving Indian food for weeks, so I settled on making this awesome chicken tikka masala. I thought I had everything I needed, but I didn’t have any garam masala or any ginger. Thinking on my toes, I mixed equal parts of Trader Joe’s pumpkin pie spice and curry powder. I got something that was very close to garam masala AND a bit of ginger flavoring. I also added diced tomatoes, onion and green pepper. Other than that, I followed the recipe. I also decided to make roti instead of naan because I was out of yeast. I also served the meal with vegetables. Try the recipe and let me know what you think.
