For dinner tonight (and the next few weeks) I have prepped several slow cooker meals. I was able to get all of the ingredients for these recipes for $80 (mostly organic, too). My husband and I spend way above that when buying groceries and ordering food, so I am excited to see my money stretch. I’m also excited for two vegan/vegetarian meals on the list. I’ve prepared nine different meals for now, but I’ll be making a few more tonight. I expect to get at least two nights worth of food from each recipe. I prepped this recipe as outlined. Instead of simmering on the stove, I will cook it in my slow cooker for four hours on high.
I modified this recipe to make it slow cooker friendly. Simply dump all of the ingredients into your crock pot and cook on high for four hours or on low for 8 hours. twenty minutes before serving, blend ingredients for five minutes. Place the soup back in your crockpot to warm.
