
I am a huge fan of T.G.I.Friday’s…especially the sizzling chicken and cheese. I decided to make it for dinner a few nights ago and it turned out pretty good. Now, I’m passing the info to you.
What you’ll need:
2 chicken breasts
2 tablespoons coconut oil
1/2 teaspoon garlic powder
1/2 teaspoon Old Bay seasoning
1 tablespoon of Paprika
1/4 teaspoon black pepper
Salt to taste
1/2 green pepper
1/2 red pepper
1/2 yellow onion
1 cup of Mexican blend cheese
Non-stick Skillet
Instructions:
Combine all seasonings. Rub mixture on the chicken breasts.
Slice peppers and onions into medium-sized strips.
In a non-stick skillet, sauté chicken breasts in coconut oil over medium heat. Cook evenly on both sides to a golden brown color.
While chicken cooks, sauté peppers and onions in coconut oil until onions are translucent (should be cooked in separate pan). Season with salt and pepper.
Remove chicken breasts from skillet. Top with peppers, onions and cheese. Serve with rice or mashed potatoes.
